Easy Low Carb chicken and sausage gumbo with cauliflower rice


Ok..so here's my secret to wonderful quick gumbo.

Prepared, there is only 4 grams of carbs in 1/2 cup of gumbo liquid. I add frozen cut okra, frozen chicken tenderloins, and sliced smoked sausage. I cook it for about 30 minutes and pour it over cauliflower rice. Serve with a can of Diet A&W. Laissez le bons temp rouler!!

  1. I have questions about cauliflower rice. How well does it reheat? Can it be frozen after cooking? I need to have things already prepared to keep me on track!
